There is always the problem of what to do with the sad-looking apple in the fruit bowl that everyone is avoiding. We are all hoping that someone else will pop it in their lunch box and take away our guilt at not eating perfectly good food – but they don’t! But before you throw it out remember that there are good uses for leftover food.
Far better than throwing it away is to transform it into a very quick dessert with a sheet of pastry and a few simple ingredients that you have in your kitchen. Create a quick and easy apple pie, which can also be vegan. You can use shortcrust or puff as it will work with both. I always keep a packet of pastry in the freezer for just this type of occasion.

Once the apple is sliced and diced you can start of the fun part – the flavours. Add a couple of dabs of margarine, about 2 teaspoons in total. This will give the finished dessert a softer mouth feel and improved texture.
If you have very little sugar in your diet you may choose to avoid any extra sweetness, but for the rest of us two teaspoon helps. You could use plain sugar, brown sugar or honey. I used some maple syrup which has been hanging around since the last time we all went pancake crazy.

Finishing your creation is a great opportunity to use up other leftovers. It is hard to see with all the pale colours but I completed mine with a sprinkling of slice almonds. You could also add a dusting of cinnamon, a sliced strawberry or some desiccated coconut.

Fold over the top and bottom and crimp the edges with a fork. Spray a biscuit tray with oil, place on tray, and then spray oil over the top. Pop into a 200C oven for 20 minutes or until brown.

Vegan Apple Pie or Turnover Recipe
Ingredients:
- 1 sheet shortcrust or puff pastry
- 1 apple – peeled and diced
- 2 teaspoons margarine
- 2 teaspoons sweetener (sugar/honey/syrup)
Optional:
- Sliced nuts
- 1/4 teaspoon cinnamon
- dessicated coconut
- berries
Bake:
- 200C for 20 minutes
